Aromatic spices and creamy red lentils served over rice make this healthy and delicious dinner a real winner!
Ingredients
2TbspOlive Oilor coconut oil
1Oniondiced
2ClovesGarlicdiced
1TbspGingerdiced
115 ozCan Diced Tomatoesor crushed tomatoes
1 Box32 ozChicken Brothor vegetable stock for vegetarian option
1.5CupsRed Lentilsrinsed
1tspCumin
1tspCoriander
1tspCurry
1tspGaram Masala
1/2tspTurmeric
1/2tsp Salt
Instructions
Heat a pot over medium-high heat and add oil. Saute onion until soft and translucent. Add the garlic and ginger and saute for 1 minute.
Turn heat down to medium and add spices. Stir constantly for 30 seconds to avoid burning the spices while opening their flavors.
Add lentils, tomatoes, and broth and stir to combine.
Bring up to simmer and simmer with a lid on for about 30 minutes or until the lentils are creamy and most of the liquid has been absorbed. Stir occasionally while cooking.
Serve over rice. Top with diced cucumbers, if desired.
