Ingredients
1Oniondiced
1Bell Pepperdiced
2-3clovesGarlicminced
28oz canDiced Tomatoesundrained
115 oz canBlack Beansdrained and rinsed
115 oz canRed Kidney Beansdrained and rinsed
115 ozcanCorndrained. Can use about a cup or so of frozen corn instead
115 oz can Pumpkin Puree
3CupsChicken Stock/Brothcan use vegetable stock/broth to make this vegetarian
1TbspChili Powder
2tspCumin
1 tspCoriander
1tspTurmericfor health benefits, if you don't have any that's fine!
1TbspOregano
1tspSaltmore to taste, if desired
1TbspOlive Oil or Coconut Oil
Instructions
Heat oil over medium-high heat until hot. Then add onions and peppers and saute until onions are translucent.
Add garlic and saute for another 30 seconds. Add spices and stir constantly for another 30 seconds to "sweat" the spices, and be careful not to burn them.
Add the stock, tomatoes, pumpkin, beans, and corn, and stir to combine.
Bring to a simmer and turn down to medium heat to simmer for an additional 20 minutes.
Serve with sour cream, cheese, or tortilla chips, and enjoy!
