Quick and easy fried goat cheese is crispy on the outside and soft and warm on the inside. This will be a favorite snack or appetizer!

Ingredients
4TbspOlive Oilenough to cover the bottom of the skillet
10ozGoat Cheese LogI use Chevre cheese
1cupPanko Bread Crumbs
1/2cupFlour
1Eggbeaten
1TbspDried Italian Herbs
1/4tsp Saltor alternatively to add saltiness: use 2 Tbsp finely grated Parmesan cheese.
Instructions
Place goat cheese in the freezer for 15 minutes to harden slightly while you prepare your dipping station.
Prepare flour and salt in one bowl, the beaten egg in another bowl, and a third bowl with the panko and herbs (and parmesan cheese if using instead of salt).
Remove the goat cheese from the freezer and slice into 1/2 inch discs. Wipe the knife with a rag of warm water after each cut to enable a clean and easier slice. It is okay if some of the discs need to be patted and reshaped after you slice them!
Dip each disc of goat cheese first into the flour, then egg, then panko mixture and be sure to coat all sides. Set them aside.
Pour enough oil in the skillet to cover the bottom and heat the oil over medium-high heat until hot.
Gently add the goat cheese to the oil and fry to a golden brown and then flip to fry the other side. They cook fast so check them and don't leave them! They might take about 2 minutes or less on each side.
