Cheese-Stuffed BBQ Chicken Meatloaf is guaranteed to satisfy any deep hunger with its hearty, smoky, cheesy goodness!
Ingredients
1TBSButter, Olive oil, or Coconut oil
1SmallSweet Potato (about a cup or so)can substitute with carrot
1SmallOnionyellow, white, or sweet will work
2LbGround Chickencan substitute with ground turkey
2Eggs
1CupPanko-style bread crumbs
1/4CupBBQ sauce, plus more to top the meatloaf
2tspCumin
2tspChili powder
1/2tspCoriander
1/2tsp Garlic powder
1tspSalt
4ozBlock Cheesecheddar, colby jack, pepper jack, use a favorite!
Instructions
Preheat the oven to 375, and grate the sweet potato and onion.
Over medium-high heat, melt the oil or butter and add the sweet potato and onion. Saute for maybe 5 minutes or until the sweet potato has turned a brighter orange color. Set aside to cool for a few minutes while you combine the other ingredients.
In a mixing bowl, combine all ingredients and mix very well. Get your hands dirty!
On a parchment paper-lined sheet pan, place half of the meat mixture and shape it into about a 12-inch long log. Create a well in the middle and add cheese. Top with remaining meat and pat well to seal the cheese into the meatloaf.
Top with the desired amount of BBQ sauce and bake for 50 minutes to an hour. Use a meat thermometer to check the internal temperature for doneness.
